  • 2 large cucumbers
  • half a cup pineapple

  • 2 tsp. sea salt
  • pepper, freshly ground
  • 1/2 cup parsley, chopped
  • 4 large cloves garlic, chopped
  • 1 roughly chopped cabbage,
  • 2 quarts water
  • 2 tbsp. fresh oregano, chopped
  • 2 tbsp. paprika
  • 8 sprigs parsley, chopped stems and leaves

Method of Preparation:

Combine all the ingredients in a pot except for the chopped parsley. Add the water and when it starts to boil reduce the heat. Simmer covered for about 1 hour. Adjust the seasoning.

Remove the whole parsley sprigs and serve it topped with some freshly chopped parsley. Serve with a chopped apples and side of traditionally fermented sauerkraut.
